Pale yellow in color with intense aromas of ripe peaches and pears, with rose petals, and ginger. Slightly frizzante and sweet, balanced acidity and a fresh, persistent apricot finish.
WINEMAKING NOTES: The grapes are harvested late in the season to achieve a wonderful sweetness. They are hand-picked and immediately crushed and pressed. The juice is clarified by gravity and stored at a very low temperature, to prevent fermentation. Over a year, yeast is added to small amounts, which undergo alcoholic fermentation at 12°-14° C in stainless steel pressure tanks to preserve natural CO2. Malolactic fermentation is avoided in order to preserve the varietal fruit characteristics and freshness. The fermentation is interrupted at an alcohol level of about 5.5%, by lowering the temperature again along with filtration. At this stage this partially fermented wine is bottled.
