WINEMAKING NOTES: Grapes were sourced from Plane’s Block, the first commercial planting of Cayuga White in the country. Hand harvested on September 21, whole cluster pressed and spontaneously fermented in 65% stainless steel and 35% neutral barrel. The fermentation lasted three months and went through full malolactic. Bottled unfined and unfiltered, with 15ppm SO₂ added just before bottling.
