TASTING NOTES: Aromatically intense with apple, pear, and white peach. The palate displays notes of honeysuckle, spices, and a saline finish.
WINEMAKING NOTES: Certified organic vineyards, biodynamically farmed. Fermentation takes place in stainless steel with selected yeasts and a minimum of 36 months on the lees. Each step of the winemaking process is timed to the lunar calendar, and there is no oak or malolactic fermentations, intentionally allowing the minerality to shine.
