TASTING NOTES: Aromas of dried fruits, herbal tea, citrus, starfruit. Delicate tannins and refreshing acidity.

WINEMAKING NOTES:  2021: The wine is fermented with native yeast, on skins for 7 days. Then rests in tanks, lightly filtered and fined (vegan-friendly pea-protein), and bottled the following spring with a bit of sulfur. Making of: The 2023 wine is fermented with native yeast, on skins for 5 months. Then rests in tanks, lightly filtered and fined (with vegan-friendly pea-protein), and bottled the following spring with a bit of sulfur.

PAIRS WELL WITH: Asian dishes, Tajine, milder cheeses or even chocolate.
