WINEMAKING NOTES: Macerated in contact with the skins for two days. Alcoholic fermentation and refermentation using the Martinotti (aka Charmat) method. Aged briefly in the bottle before its release.
FUN FACT: The Lambrusco di Sorbara DOC requires that producers plant the Salamino grape alongside the Lambrusco di Sorbara grape in about a one to three ratio. Lambrusco di Sorbara has a flowering disorder that often keeps it from self-pollenating. Salamino is planted alongside it to act as the pollinator. For this reason, many Lambrusco di Sorbara wines have both Lambrusco di Sorbara and Salamino in the blend (up to 40% is allowed). Paltrinieri prefers their Lambrusco di Sorbara wines to be 100% Lambrusco di Sorbara variety and so they also make a 100% Salamino wine, the Solco, to make sure of the Salamino grapes. "Solco" translates to "furrow" and signifies to them the idea of leaving a mark after having done someting positive.
