All of the agave remnants that are left over after production are given to local farmers to use as cattle feed. This tequila is and always has been additive free. La Gritona loosely translates to " the lady that yells".

Taste is vegetal and smooth, herbaceous with white peppercorn. It is light on sweetness and the finish is extremely round with no burn.
La Gritona Reposado is a 100% de agave tequila distilled by Melly Barajas and her staff of women at her small distillery. The agave has a maturation age of 8-10 years and originates in the iron-rich red soil of the local Jalisco highlands. It is put in ovens within 24 hours of trimming, cooked for 24 hours, then left to rest for 24 hours before crushing. The liquid is naturally fermented and oxygenated in open steel vats for about 8-12 days. Once fermentation is complete the blanco tequila is distilled twice then rested in reused American whiskey barrels for 6 months. The same barrels are used over and over again to be stripped of residual oak, whiskey and color so the notes from them are as stunted as possible in the tequila. The aging is intended only to soften and round out the blanco tequila from which La Gritona is derived, not to introduce new flavors. The tequila is then bottled in one of the most distinctive bottles on the market, hand blown from recycled Mexican glass in Zapopan, an hour away from the distillery.
