WINEMAKING NOTES: Traditional method- separate primary fermentation in stainless steel tanks then blended before secondary fermentation in the bottle.

PAIRS WELL WITH: Traditional Spanish seafood paella, salmon tartare or camembert with candied kumquats and lavender almonds.
