Zesty citrus, tea, saline, and grassiness on the nose. The palate confirms with notes of orange rind, white tea, preserved apricots, white flowers, grapefruit, and slight herbaceous notes. Slightly funky, dry, medium-high acidity, light tannin, and slightly cloudy.

WINEMAKING NOTES: Demeter-certified biodynamic. 5-7 days of skin contact. Fermented separately in a combo of clay and oak, then blended and finished in large oak barrels. Native yeast, unfined, unfiltered. Low sulfur and ABV. Practicing organic and vegan. 

PAIRS WELL WITH: Snacks of green olives/anchovies/pickled peppers or almonds; soft sheep's milk cheeses; spicy Asian dishes; Korean banchan (vegetable side dishes like kimchi); your roof deck or porch.
