WINEMAKING NOTES: Ramato is a winemaking technique from Northern Italy where pinot gris / pinot grigio grapes are allowed to have extended skin contact, giving them a copper-like hue. Field Recordings pays homage to this practice by letting the grapes macerate for 60 days. Daily tastings confirm that the grapes are ready to be pressed off the skins and the wine is then aged for 6 months in French oak and acacia barrels before it's blended, filtered, and bottled.
PAIRS WELL WITH: A sandwich piled high with porchetta, a salami-focused charcuterie board
