WINEMAKING NOTES: Soft pressing of whole bunches, fermentation in thermo-controlled stainless steel barrels. Aged 4 to 5 months in stainless steel with subsequent refinement and bottle aging for approximately 2 months. Practicing organic, sustainable, and vegan.
