The nose is clean, light, subtle, with delicate aromas of almonds, wild herbs, and bread dough. Light and dry on the palate with pleasant fresh notes of almonds.

WINEMAKING NOTES: Aged in casks under a layer of yeast known as the flor, using the traditional Solera system within the old cathedral style cellars of Barbadillo. This unique aging process gives this wine its distinctive flavor. 

PAIRS WELL WITH: olives, almonds, cured meats, anchovies, sashimi, salads, cold soups, fish, and seafood.
