TASTING NOTES: Fresh and vibrant aromas of dehydrated citrus fruits like lime and grapefruit, along with herbal undertones and hints of green apple. The palate is crisp and refreshing, featuring zesty acidity, bright fruit flavors, spices, cool herbs, and a mineral finish that adds complexity.
WINEMAKING NOTES: Hand-harvested grapes grown in 3 different soil types; 6 different harvest moments in a 2 week time span. Spontaneously fermented with native yeasts and aged inside egg-shaped cement amphora. Some gets 3 weeks of skin contact, some is fermented then aged in oak and some is from previous vintages. Unfiltered.
FUN FACT: It took 3 years for the Argentinian authorities to approve this wine for sale. Even then, it was only allowed in 4 specific markets and required a signed notary due to its cloudy, unfiltered nature and the presence of yeast sediment.
